Make the cheesecake filling and freeze. In a large bowl, beat the mascarpone and ¼ cup of the sugar using hand beaters until fully incorporated. In a separate bowl, combine the heavy cream, the remaining 3 tablespoons sugar, vanilla extract, almond extract and a pinch of salt.
Instructions. Mix crust ingredients and press into a 9 x 9-inch pan. Set aside. Place 1/2 cup of the cream in a microwave-safe container. Sprinkle the unflavored gelatin over the cream. Let sit for 5 minutes, then microwave at HI for about 30 seconds or until cream is very hot. Stir well to dissolve the gelatin.
Beat the cream cheese until smooth in a large bowl, scraping down bowl and beaters as needed. Gradually beat the sugar until incorporated, about 1 minute. Beat in the eggs, one at a time, until completely combined. Beat in the sour cream, lemon juice and vanilla until combined. Pour the filling over the crust.
Step 1: Mix peanut butter and softened butter together in the large bowl of a stand mixer or use a hand mixer. Beat until fully blended, scraping down the sides as you go. Step 2: Turn the speed down to low and add vanilla extract followed by the slow addition of the powdered sugar.

Instructions. Add the cranberries, orange juice, maple syrup, and cinnamon to a saucepan with matching lid over medium-high heat. Bring to a boil, then reduce heat to medium-low, cover, and cook for 10 minutes, until the cranberries have popped and the sauce has thickened and reduced.

Margarita Cheesecake. In a separate bowl, combine cream cheese, 1 cup confectioner’s sugar, tequila, lime juice, lime zest and vanilla, stirring until smooth. Spread the cream cheese mixture evenly on top of the graham cracker crust. Sprinkle salt on top of the cheesecake. Freeze for one hour.
Turn the mixer off and add the heavy whipping cream and sugar. Beat on medium speed until thick and smooth, about 2 minutes, scraping the sides and bottom of the bowl as needed. Spread the cheesecake filling evenly on top of the chilled graham cracker crust. Spread cheesecake filling into prepared graham cracker crust. These no-bake cheesecake bars get a stunning, swirly topping of blackberries that looks more like art than dessert. Bonus: The cheesecake itself is tart and fluffy with the creamiest texture.
Place pan flat in freezer. In a large mixing bowl, cream the cream cheese, confectioner’s sugar, and vanilla on high speed until light and fluffy (about 3 minutes), scraping the sides of the bowl as necessary. Add yogurt to the mixing bowl and mix on medium speed until combined.
